Come and experience an authentic journey in the heart of Molise with a guided visit to the award-winning Caseificio Di Nucci in Agnone. At the beginning of the tour, you will discover the importance of the local raw material: milk, selected every day from small local farmers and their beautiful cows.
Wearing a cap and shoe covers, you will enter the workshop to observe all the stages of production first-hand: from the raw milk, to which rennet and natural starter whey are added, to the curd. You will witness the artisanal stretching and manual shaping of the cheeses by our expert cheesemakers, following each step: stretching, shaping, cooling, salting and packaging.
The visit continues in the ageing cellar, lined with local stone, where you can admire and smell our renowned Caciocavallo, aged for up to 24 months. You will end the experience with a guided food tasting of five cheeses produced on site, accompanied by Molise water and local bread.
