    Begin your culinary journey with a walk along a corridor that encircles the production facility, featuring large glass windows through which you can observe the ageing rooms and production areas of the finest cured meats. This insightful visit is supported by an expert collaborator who provides detailed explanations of the craftsmanship and ageing processes involved.

    Following the tour, enjoy a tasting session in a dedicated tasting room. The selection is rich and diverse, starting with a full platter of local cured meats, including the iconic Lardo DOP, available in its classic three-month ageing and a five-month reserve, complemented by naturally candied chestnuts to create a delightful contrast of flavours.

    The tasting also includes Mocetta bovina, Franbon, an aromatic prosciutto crudo flavoured with genepy, Coppa al ginepro, Boudin—a traditional sausage with potatoes and beetroot—and other exclusive specialities from Maison Bertolin.

    To enhance the experience, a variety of local cheeses, such as the renowned Fontina DOP, are offered alongside a glass of fine Valle d'Aosta red wine. For minors or those who prefer non-alcoholic options, there are various locally produced fruit juices available, including apple, blueberry, apricot, strawberry, and forest fruits.

    The session concludes with a traditional coffee accompanied by Tegole, hazelnut-based cookies that are a classic confection of the region, providing a perfect sweet finish to this authentic Valle d'Aosta gastronomic journey.
