The Dinner
Your evening begins at 6:30 PM with a friendly greeting from your hosts. At 7:00 PM, the dinner will start. A long table is set right on the beach, decorated with banana leaves for a boodle fight-style dinner. The menu changes with the season and the day’s catch, but you can expect a colourful mix of: tofu sisig, grilled fish, calamari, lome noodles, rice, spring rolls, vegetables, chicken adobo, and more. Each dish is cooked using family recipes, highlighting the diverse flavours of Palawan.
Vegetarians and vegans are welcome—there are always options to ensure everyone can enjoy the meal. Water is included, and local beers, soft drinks, cocktails, and of course gin are available for purchase at the bar.
Dancing, Singing, and Bonfire
After dinner, gather around a beach bonfire under the stars. Watch a cultural dance performance, where local dancers showcase traditional Filipino culture. If you want to join, you can even learn the Tuting, Tinikling, and Solteros from our performers!
Of course, no Filipino event is complete without Karaoke! Two microphones and a laptop let everyone choose songs from around the world. No matter if you want to sing alone, join with friends, or just enjoy the laid-back atmosphere.
This evening is a chance to meet people from different places, connect with a Filipino family, and create lasting memories in Sibaltan, El Nido. Join our peaceful shores of Palawan, listen to the sound of the waves, the glow of the fire, and the joy of sharing food and music together.
