Traditional “One-Pot” Takayama-Style Soya Sauce Ramen
Our beautiful mountain city is famous across Japan for its unique style of ramen, affectionately known by locals as Chukasoba.
Unlike most Japanese ramen where the sauce and broth are kept separate until serving, authentic Takayama ramen is defined by simmering the savoury seasoning and broth together in a single pot, creating an exceptionally harmonious, deep flavour.
In this workshop, you will learn the clever home-cooking secrets behind this classic “One-Pot” tradition:
The Magic of Braised Pork
Gently simmer tender pork in the pan. The rich juices and savoury cooking reduction naturally become the flavourful base of our soup.
The Traditional “One-Pot” Simmer
True to Takayama style, we combine the pork base with everyday seasonings—soya sauce, Japanese sake, a touch of sugar, ginger, scallions, chicken stock, and toasted sesame oil—and simmer them together in one pot to let the flavours meld into a glossy, rich soya sauce soup (completely free of fish/seafood broth).
Classic Assembly
Build your steaming bowl with Takayama's signature thin curly noodles, a delicately thread-sliced marinated egg, and handcrafted toppings.
