Begin your experience by meeting at a traditional townhouse in Kyoto’s Okazaki district at 7:00 a.m., where you’ll start preparing your bento box right away.
Using fresh, seasonal ingredients, you will cook rice with Kyoto’s pure underground water and prepare dishes featuring Kyoto eggs, kombu and bonito dashi, ground sesame seeds, and miso-marinated fish. You will make two types of onigiri, choosing your favourite fillings, and learn how to shape them gently and beautifully.
Next, you will prepare a fluffy dashi-maki tamago, a traditional Japanese rolled omelette rich in bonito dashi.
Your handmade bento will include:
Two onigiri (rice balls)
Dashi-maki tamago (rolled omelette)
Spinach with sesame dressing
Saikyo-yaki (Kyoto-style miso-marinated grilled fish)
Nama-fu dengaku (grilled wheat gluten with sweet miso sauce)
Around 9:00 a.m., head to the Kamo River to enjoy a peaceful picnic, savouring your homemade bento in the calm morning atmosphere of Kyoto.
After your meal, you will make matcha tea and experience a traditional Japanese tea ceremony. Throughout the experience, you will learn about Japanese cuisine, Kyoto’s water culture, and the techniques behind making onigiri and dashi-maki tamago, creating a memorable and meaningful cultural experience.
The experience will finish at around 10:00 a.m., although the schedule may vary slightly depending on the day.
※If the weather is bad and an outdoor picnic is not possible, you can enjoy your bento meal inside a beautiful traditional townhouse.
