We'll meet at a place in the centre and head to a market so we can shop together.
Then we'll go to our town, which is located 20 minutes from city centre.
We'll start by having chocolate with bread. We'll then prepare our breakfast: tortillas, memelitas, tetelas, and empanadas, as well as three traditional molcajete sauces. In the process, we will explain the flavours, techniques, and traditions related to the ingredients and dishes.
Now it's time to enjoy breakfast! We'll talk about Oaxacan culture and the history related to gastronomy.
We will now prepare our lunch: yellow mole, green mole, black mole, or coloradito.
The goal is to understand the flavours, names, differences, and how ingredients can be substituted when we don't have them on hand.
Other highlights
If you need to have breakfast beforehand, please try to keep it light, as we will have a lot of food to taste.
No culinary skills are necessary; just a desire to learn about Oaxacan food culture.
In case of allergies or dietary restrictions, please let us know so we can adjust the ingredients.
Also, if you want to try a specific dish, let us know beforehand. We'll always be happy to accommodate you.
