A workshop where you can experience how and why flavours change, intensify, and become complex with just salt, smoke, air, and time. An immersion in the history and heritage of Galician cuisine. You will learn how food was preserved and how these ancestral preservation methods (salting, smoking, marinating, and fermenting) enhance the flavour of fish and seafood from the Galician Rías. Afterwards, we will taste these products prepared by our chef in six dishes that will surprise you. We will end the workshop by tasting a delicious dessert.
