Gigi will welcome you to one of Putignano’s most iconic restaurants. Located in
the historic centre of the town, the restaurant was once a wine cellar where wine
was produced. Later transformed into a tavern in the 1980s, Gigi moved his
pizzeria there in 2021. It is partly excavated in the rock and characterised by
magnificent stone vaults.
At the beginning of the pizza cooking class, Gigi will tell you about his journey as a pizza chef. He will show you the top-quality ingredients that he uses both for the dough and for the toppings of his gourmet pizzas – which have become regionally famous for the creativity of their combinations – and he will explain you the maturation process of the dough.
Next, getting to the heart of the pizza making experience, Gigi will guide you in
the preparation of your pizza. You will start by preparing the dough and closing
the dough balls to make pizzas. Then, using dough that has already matured for
over 48 hours and is therefore highly digestible, you will learn how to hand stretch and garnish your pizza. It will then be time to put your gourmet pizza in the oven with a professional peel, like a real pizzaiolo, and wait for it to bake.
The pizza experience will end with the tasting of the pizzas that each participant
will have prepared. Sitting around a table and accompanying the tasting with a
drink, you will have time to chat with Gigi to ask him all the questions you want
and learn more about his storey as a creative pizza chef.
