Dobrin cooks the foraged ingredients into a gourmet meal on the spot — polenta with wild mushrooms and homemade goat cheese, bread with his own herb seasoning, wild garlic pesto. Every meal is different because every forest walk is different. Autumn brings the peak mushroom season — porcini, chanterelles, boletes.
