Our 15+ tasting culinary journey begins beside the famous Horloge d'Essaouira before weaving through the medina's hidden alleyways. Led by our foodie guides, you'll discover why this laid-back fishing town has quietly become one of Morocco's greatest culinary destinations. Before we get started, our tour reflects the local cuisine and the limitations of traditional eateries mean we unfortunately cannot cater for every dietary restriction. Here's an honest appraisal so nobody is disappointed:

Essaouira Fishing Port

Our first stop could only be Essaouira's famous fishing port. Long before the cafés open, hundreds of unmistakable blue fishing boats return from the Atlantic loaded with whatever the ocean has decided to offer that morning. We'll wander among fishermen repairing nets, seafood auctions and charcoal grills before pulling up at a humble seafood shack for a taste of the day's freshest catch. Expect delicacies straight from the Atlantic, from freshly shucked sea conch and sea urchin to an anchovy ceviche that perfectly reflects Essaouira's growing reputation as Morocco's seafood capital. We'll also visit the city's fish market, selecting fresh fish and shellfish that will later be cooked. Before leaving the harbour, we'll pause at the spectacular Mogador viewpoint, where cannons, crashing waves and fortified walls create a scene that feels straight from the set of Game of Thrones.

Medina of Essaouira

Leaving the ocean behind, we disappear into the medina where breakfast remains one of Morocco's most cherished rituals. We'll settle into a neighbourhood café for softly cooked Moroccan eggs alongside warm semolina breads and amlou, the country's answer to nut butter, blending roasted almonds, honey and precious argan oil into one dangerously addictive spread. Everything is washed down with glasses of sweet mint tea, poured from impressive heights in true Moroccan fashion. Nearby, we'll collect still-warm loaves from a communal bakery that has been feeding the neighbourhood for more than a century. Hidden beneath the streets, families continue to bring their dough here every morning, baking bread the same way generations before them have done. Fresh from the oven, it's the perfect companion for steaming bowls of bissara, the velvety fava bean soup that has fuelled Moroccan workers for centuries.

Medina of Essaouira

If there is one ingredient Morocco truly reveres, it's the humble bean. Our next stops reveal why legumes remain the backbone of everyday Moroccan cooking. We'll sample comforting bowls of loubia white bean stew, earthy lentils known, and the wonderfully rich khreen, a slow-cooked beef knuckle stew traditionally finished with generous pinches of cumin and salt. These aren't restaurant dishes. They're the everyday comfort foods that locals grow up eating and continue returning to throughout their lives. As we continue through Essaouira's quieter streets, we'll stop for beautifully stuffed sardines packed with fragrant chermoula, Morocco's iconic herb marinade, alongside crisp golden ma'qūda potato fritters.

We'll pause to sample plump local dates before exploring the country's remarkable pastry tradition, where pastry, honey and toasted nuts produce some of North Africa's most irresistible desserts. Returning to the seafood that defines Essaouira, we'll sit down for a fragrant seafood tagine alongside come perfectly salted Atlantic sardines grilled over charcoal and smoky peppers, creating one final celebration of the ocean that has sustained this remarkable city for centuries.
