Make three types of traditional Tuscan pasta: ravioli (stuffed pasta), tagliatelle, and malfatti. Learn the art of handmade egg pasta using local flours, following age-old Tuscan farming traditions. Each pasta will be paired with a delicious sauce to enhance its flavour.

‍ Lasagne Course
Prepare homemade egg pasta for lasagne and create two flavourful sauces, including béchamel, to layer your dish to perfection.

‍ Gnocchi Course
Master two types of gnocchi: a classic Tuscan recipe and the chef’s special variation.

Pizza Course
Make pizza dough using both a quick-rise method and a sourdough starter. Learn traditional kneading techniques and create your own pizza using seasonal, local ingredients.

Tuscan Dessert Course
Prepare classic Italian desserts such as tiramisu, cantuccini, panna cotta, or festive ricciarelli cookies. Learn professional garnishing techniques and discover perfect flavour pairings.
