The Onishiya Suishoen was a great start to a long trip in Japan. The staff and town is very accustomed to foreign visitors, so any questions or problems you might have will be easily resolved by the accommodating staff. In fact, there was a German girl working there, too, who had perfect English.
We had breakfast each morning, which I wouldn't do again. It is a traditional Japanese breakfast which, for me, would have been just fine once, for the experience. Same goes for the kaiseki ryori style dinner. Very beautiful and a great experience, but just once--and very expensive. It just doesn't really jive with the western pallet.
The hotel had an evening shuttle service which was great. They came within minutes of calling them from one of many set pick-up location in town.
Also, they have bicycles to use for free. We rode our bikes to the Kinosaki Onsen Ropeway one morning and took the gondolla up the mountain. Nice thing to do! And it is no more than a 10-15 minute bike ride from the hotel.
The onsens in town were nice, as well as the one at the Onishiya Suishoen hotel. We visited 4 out of the 7 onsens in town, and had a great time at each one. There are no co-ed baths, so if you're looking to have some bathtime with your sweetheart---no can do.
