Balut is a 14 to 21-day old fertilized duck egg depending on how developed one wants the duck embryo is. Balut is a common street food that has its origins in China. Pateros is the balut-capital of the Philippines. Balut is boiled and then eaten with salt or some spiced vinegar. The way to eat balut: crack the shell, peel it bit by bit, slurp the soup (cooked amniotic fluid of the chick) before eating the egg and embryo. It is a favorite street food in the Philippines as it is cheap and nutritious. Another version for the less squimish is Penoy. It is an unfertized duck egg that is boiled.
